These are the best!!!!

Cream Cheese Chicken Enchiladas

You will need:

Chicken breasts ( about 3 for one pan of enchiladas)
Cream cheese (I usually only need 1 regular size brick)
2 small cans of diced green chilis (mild)
1 can cream of chicken soup
Chicken broth
Tortillas
Cheese


Cook the chicken…..in a crock pot would be ideal with some chicken broth because then it shreds easily. Sometimes I just thaw the chicken and then boil it. Use 2 forks and shred the chicken.

Add the cream cheese (softened) to the chicken as well as 1 can of diced green chilis. Mix it all up.

Scoop the chicken mixture into the tortillas and roll up. Place in a greased 9x13 pan.

Combine the cream of chicken soup, the last can of green chilis and some chicken broth to make a nice sauce consistency. Make sure it isn’t too thick. Spread mixture over the enchiladas. Sprinkle cheese over the top and cover with foil. Bake at 350 for approx 30 min. It may need longer…..you can take the foil off towards the end to let the cheese fully melt. (In the past if I cook too long…the bottoms become overcooked!...learn from Lisa)

NOTE….I make mine a little different every time cuz I don’t use an actual recipe. I always take a spoon and move the enchiladas slightly after putting sauce on top to make sure the sides and bottoms of the enchiladas are covered. I’ve also done this where I pour chicken broth in the bottom of the pan before putting the enchiladas in…maybe half an inch deep of broth…..I just like the sides and bottoms to be moist. And if the pan is really full…maybe set it on a cookie sheet before popping in the oven to catch any drips. Good luck!

Pumpkin Bites

Pumpkin Bites

2 cups sugar
1 cup oil
4 eggs
15 oz can pumpkin
2 tsp. baking powder
1 tsp. baking soda
1 tsp cinnamon
1 tsp nutmeg
½ tsp. cloves
½ tsp. salt
2 cups flour

Method:

1. Preheat oven to 350. Generously spray mini-muffin tins with non- stick spray.
2. In large mixing bowl, combine sugar and oil on medium speed. Add eggs one at a time and pumpkin until well combined.
3. With mixer on low speed, add dry ingredients and blend for 1 minute.
4. Fill muffin cups with 2 tsp. of batter. Bake for about 10 to 12 minutes until cake tester inserted in center of pumpkin bite comes out clean.
5. Cool bites in pan for 8 minutes, turn out onto wire rack to cool completely. Frost with Cream Cheese Frosting.


Cream Cheese Frosting

4 oz cream cheese (room temp)
¼ cup butter (room temp)
1 lb powdered sugar
Evaporated milk
1 tsp vanilla

Method:

1. In bowl of electric mixer, combine cream cheese and butter till light and fluffy.
2. Add powdered sugar to butter mix, adding evaporated milk to create desired spreading consistency.
3. Add in vanilla, beat frosting at med/high speed until light and fluffy!

NOTE......I pipe the icing with a large tip onto the pumpkin bites and they look so proffesional and cute!

Mexican soup

2 liters chicken stock
4 chicken breats

Carrots

Celery

Onions

Salt and Pepper

Combine all ingredients in pot and simmer for two hours

Discard veggies and shred chicken

Add shredded chicken

1 can diced tomatoes

1 can black beans drained and rinsed

1 can of kidney beans drained and rinsed

1 package of taco seasoning

Simmer for one hour

Serve with chips, sour cream, and cheese

Chicken Parmesan



Here's my take on the dish.
Pan 1: I take a couple of packages of saltines and blend in the blender with some parmesan cheese and black pepper.
Pan 2: 1 egg with a little bit of milk/cream or buttermilk (use choose).

Flatten your unthawed chicken breasts (I use boneless, skinless cause I'm lazy) by placing one in between some plastic wrap or parchment paper (this will avoid splattering chicken juice all over the kitchen) then pound with a mallet or rolling pin if you have one until fairly flat (helps to avoid over cooking in one spot and under cooking in another). Dip in egg wash then cracker mixture and place into a frying pan (use vegetable or olive oil - sometimes I do a mixture of butter and olive oil) Now fry until crusty on both sides and place in a greased baking dish, place a dollop of red pasta sauce on top and spread liberally some shredded mozarella cheese all over the top. Bake in a 350 degree oven for about 20 minutes (not too long or it will be mushy). Just until cheese is melted.
Assembly: Serve on a dinner plate with your favorite pasta - angel hair, spaghetti, linguine or fettucine and red sauce. Sprinkle your pasta and chicken with parmesan. Black cracked pepper and a green salad. Garlic bread/toast is a yummy addition.

Cabbage Rolls -


Take a cabbage and separate the leaves - can be tricky but you'll get it - steam long enough to be able to roll without cracking. Brown some hamburger, onions, salt and pepper in a frying pan and add a small amount of rice (if you like it alot add more). We're cooking here - use your discretion. Now scoop some into each of your steamed cabbage leaves, roll up and place on top of a saurkraut lined casserole dish. After all are in the dish - pour a can of chopped/diced tomatoes on top and top up with some tomatoe juice (you can use V8 if you have it on hand). Bake in a 350 degree oven and serve with buttery mashed potatoes. A hearty meal for a cold night. You can use your slow cooker but don't overcook them . My Dad's family called these Holubstsi which is the Ukranian name for stuffed cabbage and they always served them at Christmas along with the turkey, my ex sister in laws family always served them Christmas Eve with Perogies (neither family was Ukranian - go figure). If you don't like saurkraut - don't use it. Can be frozen for a quick meal another night. Enjoy

Stuffed Peppers - Dad style

Dad/Uncle Dan doesn't like too much rice in them so sometimes I make them without rice. Brown some hamburger in a pan with 1/2 a chopped onion, salt and pepper to season. Add your favorite red pasta sauce to make a thick sauce. If desired throw some cooked rice into the mix. Wash, slice off the tops and remove the seeds and inner membranes of your favorite pepper (red or green or orange - you get the picture). Spoon mixture into cavity until filled sprinkle some mozarrela and paremsan cheese on top and microwave or bake in oven until pepper tender, cheese melted. Serve with your favorite salad - or bread/rolls. We often sprinkle dried hot pepper flakes on top cause we like it spicy! Hope you like it - makes a quick, healthy meal.

Chcolate Chip Treasure Cookies



These are my fav - I love the coconut in them
INGREDIENTS
1 1/2 cups graham cracker crumbs
1/2 cup all-purpose flour
2 teaspoons baking powder
1 (14 ounce) can Eagle Brand® sweetened condensed milk
1/2 cup butter softened
1 1/3 cups flaked coconut
1 (12 ounce) package semi-sweet chocolate chips

DIRECTIONS
1. Preheat oven to 375 degrees F. In small bowl, combine graham cracker crumbs, flour and baking powder.
2. In large mixing bowl, beat EAGLE BRAND® and butter until smooth. Add crumb mixture; mix well. Stir in coconut, chocolate chips
3. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 8 to 10 minutes or until lightly browned. Store loosely covered at room temperature.

My suggestions:
I always use butter when I bake (you can substitute if you want but I like butter better)
Sometimes I heat the butter and eagle brand milk, then the chocolate chips melt and make it a chocolate cookie.
I also use milk chocolate chips - cause that is what Dad/Uncle Dan prefers
You can add nuts if you like them but we don't so hence I left them off the recipe

Rollo Cookies

1 bag rollo candies - (foil removed - ha!) preheat oven to 350 degrees and grease your cookie sheets. Now the good stuff!

Cream together the following:
1/2 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla

In a separate bowl whisk together:
2-1/2 cups white flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt

Then add the dry ingrediants into the previous mixture until well blended. Take a spoonful of the chocolate dough mixture and form a flat disk in your palm - place a rollo candy in the middle and form around the rollo.

You can add nuts if you like or pour some white sugar into a flat pan or dish and roll your cookie in the sugar mixture and place on your baking sheet. Bake for 10 minutes until done or... use some white chocolate and a little bit of milk and melted together and put into either a ziploc baggie and snip the corner to decorate the tops. Good without the white chocolate too! Guaranteed to please everyone - the candy melts in the center and makes for a caramelly center. Yummm

Hot Chocolate - Crock Pot style

4 cups skim milk powder
3/4 cup of cocoa
1 cup icing sugar
10 cups water

combine in crock pot and cook on low for three hours. Top with grated chocolate and real whipped cream.

I LOVE coming home to this on a cold day. We sit and watch a Christmas movie and sip this yummy drink.

It is that time of year again..

The time where I become obssesed with cooking and I read recipe books from from front to back. Maybe we will use the site more now that it is cooler weather. When I get a chance I will start sorting the recipes into groups so it is easier to find what you are looking for.

Creamy Chicken

2- 3 chicken breats
1/4 cup of melted butter
salt/pepper/thyme
2 cloves minced garlic
cream chicken soup
8 ounce cream cheese
1/2 cup chicken broth 1 cup onion
celery or green beans


Layer in crock pot in exact order listed. I use green beans on mine. Use how ever much your family likes. Cook on low 6-8 hours. Stir when done to shred chicken. Serve on rice. This is so good. I love crock pot recipes and get so excited when I find a really good one. This one is yummy. All you have to do is throw some rice and veggies in a steamer to go with it and add a bag of buns and yummy dinner made easy.

Chicken/Spinach/Noodle Salad

THE BEST SALAD I EVER TASTED!!

CHICKEN/NOODLE/VINAIGRETTE SALAD

Cook about a cup of rotini noodles. (1 cup before cooking)
Brown 1/4 cup sesame seeds in 1/2 cup olive oil. Set aside.
Mix together:
1/3 cup teriyaki sauce
1/3 cup white wine vinegar
3 TBSP sugar
1/2 tsp salt
1/4 tsp pepper

Mix in a big bowl....the drained rotini noodles,3 cups cold diced chicken, 1/2 cup parsley, 1/2 cup green onion and 8 cups fresh spinach. Add the sesame seed/oil and the other sauce. Toss and chill 2 hours before serving. Enjoy!!!

Magic Cookie Bars

Magic Cookie Bars

I made these a couple weeks ago and they were so fun to make and tasted heavenly.

1/2 cup butter
1 1/2 cups graham cracker crumbs
1 (14 oz) can Eagle Brand sweetened condensed milk
2 cups semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Preheat oven to 350.
In 9x13 dish, melt butter in oven.
Sprinkle graham crumbs over butter. Pour eagle brand evenly over crumbs. Top with remaining ingredients and PRESS DOWN WITH FORK.
Bake 25 minutes or until lightly browned. Cool, chill if desired. Cut into bars or diamonds. Store at room temp.

NOTE**** When I made mine I used an assortment of semi-sweet chocolate, white chocolate and butterscotch chips AND I threw on mini-marshmallows and OMITTED the NUTS!!! SO YUMMY!!!!!

This is AMAZING......get ready to run to your kitchen and start cooking

Creamy Corn and Turkey Soup


1/2 cup chopped onion
1 cup chopped red pepper
2 Tbsp butter or margarine
125 g (1/2 of 250-g pkg.) cream cheese, cubed
1 can (12 fl oz / 341 ml) cream-style corn
2 cups chicken broth
3/4 cup milk
2 cups shredded cooked turkey (or chicken breast)

Cook onion and the peppers in butter in large saucepan on medium heat until tender, stirring frequently. Reduce heat to low.
Add cream cheese; cook until melted, stirring constantly. Add corn, broth, milk and turkey; mix well.
Cook until soup is heated through, stirring occasionally.

I added some flour at the end. I don't like when soups are really runny. I like it to be creamy and hearty so I always add flour.

My kids have had so many colds this year so I have been making soup like crazy. Chantel was up last night really sick and had an awful sounding cough....so I thought this soup might be nice on her throat. It was delicious. Her and Dallin loved it. I did too.

Classic recipe from growing up.....remember what we use to call this Lisa?

Pistachio Salad

1 pkg pistachio pudding
1 large can of crushed pineapple ( well drained)
1 small container cool whip
1 small bag mini marshmallows

Make instant pudding. Fold in carton of cool whip, blend these two ingredients well. Add in well drained pineapple. Add marshmellows. Refridgerate.


Nothing like a good healthy green salad..........yum.

Chex Mix aka Puppy Chow (for people not dogs)

1 cup semi sweet chocolate chips.
3/4 cup peanut butter

Melt together on stove.

Pour over 6 cups chex cereal. Mix gently.

In large ziplok put about 2 cups icing sugar. Shake the coated chex in the icing sugar and remove from ziploc with slotted spoon. Put into storage container or a bowl to serve. Repeat this step until all the chex is coated.

WARNING: this is very addictive!!!!!

Bodacious Broccoli Salad

This is an easy way to get some fresh broccoli into you...I eat this stuff like candy!

8 slices bacon
2 heads fresh broccoli, chopped
1 1/2 cups shredded sharp cheddar cheese
1/2 large red onion, chopped
1/4 cup red wine vinegar
2 TBSP white sugar
2 tsp. pepper
1 tsp salt
2/3 cup mayo
1 tsp lemon juice

Cook bacon. Drain and crumble. (Or better yet, buy bacon crumbles!)
In a large bowl, combine broccoli, cheese, bacon and onion.
Prepare the dressing by mixing the vinegar, sugar, pepper, salt, mayo and lemon juice. Pour dressing over salad and combine well. Cover and refrigerate until ready to serve.

Puffed Wheat Squares

16 cups puffed wheat
6 TBSP cocoa
2/3 cup corn syrup
1/2 cup packed brown sugar
2/3 cup butter or margarine

Place puffed wheat in large bowl. Grease a 9x13 pan.

Grease the rim of a med to large saucepan to prevent boil-over. Place cocoa, corn syrup, brown sugar and butter in the saucepan. Cook over medium heat, stirring often, until mixture comes to a full boil. Allow to boil for 1 minute, then remove from heat.

Pour chocolate mixture over puffed wheat. Stirr until evenly coated. Press mixture into 9x13 pan. Allow to cool. Cut and wrap.

Appetizer- Hot Pizza Dip

This stuff is good!

8 oz cream cheese
1 tsp. Italian seasoning ( I use half oregano, half basil)
1 cup shredded mozzarella
3/4 cup shredded parmesan
1 (8oz) can pizza sauce
2 tbsp finely chopped green pepper
2 tbsp sliced green onion

Preheat oven to 350

Combine cream cheese and seasoning well. Spread in bottom of a medium size casserole dish.

Combine mozza and parmesan. Sprinkle half of it over cream cheese. Spread pizza sauce over the cheese. Tp with remaining cheese, green pepper and onion. Bake for 15 to 18 min or until bubbly.

Serve with Hot Freach Bread or try garlic bread for a change. So YUMMY!!!

Another recipe exchange recipe....this bread looks very impressive when it's done!!

1 unsliced round loaf sourdough bread
1 pound of Montery Jack cheese, sliced
1/2 cup butter or margarine, melted
1/2 cup chopped green onions
2 to 3 teaspoons poppy seeds

Cut the bread lengthwise AND crosswise without cutting through the bottom crust. Insert cheese between cuts. Combine butter, onion and poppyseeds; drizzle over the bread. Wrap in foil; place on baking sheet and bake at 350 for 15 min. Uncover and bake 10 min longer or until cheese has melted. 6 to 8 servings

Appetizer-Ramaki

I got this recipe from recipe exchange and they are so darn good......make extra!

1 lb bacon, cut in halfs
2 cans whole water chestnuts, drained
1 cup ketchup
1 cup brown sugar

Wrap each water chestnut in 1/2 a slice of bacon and stick a toothpick through to secure (wrap the fattest end of bacon first and try to put the toothpick through a part of the bacon that's red). Bake on cookie sheet at 425 for 30 min or until crisp. Drain grease. Mix ketchup and brown sugar and pour over the wraps. Loosen them with a spatula from pan and mix up a little bit with the sauce. Then bake again for minutes only. One batch of this is never enough!!!

Appetizer- Easy Chili Dip

Easy Chili Cheese Dip

1 (8oz) cream cheese
1 can chili
Shredded Cheddar of jack cheese

Soften cream cheese and spread on the bottom of a glass pie plate. Pour 1 can of chili on top of cream cheese and microwave until hot. Top with shredded cheese. Serve with corn chips!!!

Appetizer- Baked Onion Dip

1 (8oz) pkg shredded cheddar cheese
2 cups mayo
2 cups chopped onion
2 TBSP grated parmesan

Preheat oven to 325
Lightly grease a 1 quart baking dish
In a medium bowl, Mix ingredients.
Transfer to baking dish and sprinkle with parmesan.
Bake 40 to 45 min or until onions are tender and the mixture is bubbly.

**Experiment with different cheeses....I used sharp cheddar and swiss and it was delish!****

No Flip Oven pancake (family fave.)

Preheat oven to 425
Grease a pie pan (love the spray)
For each pie pan:
2 eggs (beat)
1/3 cup flour (mix)... we use multigrain but it doesn't matter
1/3 cup milk (mix)
2 tbs melted butter (save leftover melted butter to put on top of finished product)
Mix thoroughly and pour into greased pan
Bake for 15-20 minutes
Top with a small amount of melted butter and sugar. Other great additions are toasted almonds, apple sauce, lemon juice, cinnamon, bacon, cheese... anything you like.
Each pan serves 1-2 adults

One of my most favorite recipes ever

Darren does not like this so when he is out of town......the kids and I enjoy this yummy, easy, healthy recipe

Easy Chicken and Broccoli Divan

3 cups hot cooked broccoli spears
2 cups cubed chicken
1 can cream of broccoli and cheese soup
1/3 cup milk
1/2 cup cheddar cheese
3 tbsp dry bread crumbs
1 tbsp margerine melted

arrange broccoli and chicken in pie plate or 2 quart shallow baking dish. Combine soup and milk, pour over broccoli and chiken. Sprinkle with cheese. Mix bread crumbs with margerine and spread over cheese layer. Bake at 450 for 20 min. Server with rice.

Chicken Parmigiana

1/2 c. Italian style bread crumbs
1 1/4 tsp.salt
1 lb. chicken breasts
1/3 c. olive oil
1/2 lb. Mozzarella grated
1/4 c. Parmesan cheese
1/8 tsp.
1 egg beaten
2 c. meatless spaghetti sauce

Combine crumbs. Parmesan cheese, salt, and pepper. Dip chicken in egg, then crumbs. Let dry on rack 20 min. Heat oil. Brown meat 3 min on each side. Arrange in single layer casserole. Top with sauce and Mozzarella cheese. Bake 45 min at 350. Serve over noodles.

If I am in a rush sometimes I skip the let dry on wire rack bit and just throw it in the oven. My family loves this.

Chicken Pillows

Another favorite in my family.

1 8 oz. pkg. cream cheese.
1/4 tsp. salt
1/4 tsp pepper
6 tbsp butter
2 c. diced chicken or turkey
3/4 cup mushroom/celery cooked until tender
Melted butter
Bread crumbs
1 pkg. Pillsbury crescent rolls

Cream cream cheese, salt, pepper, and butter. Add chicken and mushrooms. Cut rolls in halves, making 16. Spoon mixture on flattened rolls and roll up. Pinch together. Dip in melted butter and roll in crumbs. Bake on greased cookie sheet at 375 for 20 min.
Serve with mashed potatoes and make gravy of 1/2 cream chicken soup to 1/2 sour cream ( I always double this).

Taco soup

I have to post this one. Everyone always loves it.

Taco soup

1 pound of ground beef, brown with onion before you put in crock pot

1 can of stewed tomatoes

1 can of pork n beans

1 can kidney beans

1 can corn

1 package of taco seasoning. Or add until tastes right for you

1 can of tomato sauce

1 tbsp of brown sugar

Put everything in crockpot, including juices from all the canned ingredients.Cook on low for 6- 8 hours. After we dish up our soup we like to put sour cream and cheese on top and dip taco chips in. This is really yummy, easy and very filling.

Sweet and Sour Chicken
1- 8 oz. Fat Free French Dressing
1- 8 Oz. can Jelly (whole)cranberry sauce
1 package – Dried Onion Soup Mix
4 Boneless Chicken Breasts (you can add more or less – cut into cube pieces)

To freeze: Dump all ingredients into 1 gallon Ziploc freezer bag. Lay flat in freezer.

To cook: Mix all ingredients in a 13 x 9 glass pan. Cover with tin foil. Bake 350 degrees for 45 minutes. Stir and serve over rice or noodles.

My family really likes this one. I cut back quite a bit on the onion soup mix. I usually do in any recipe that calls for it. We like to eat this on rice. I do this meal in the crock pot and it is so easy and my family always has seconds. I also just put the chicken breasts right into the crockpot, I don't cube it.

Wilton's Extra Special Buttercream Icing

This is the icing I like to use if I am going to do a fancier than normal cake.

2 cups solid shortening
2 lbs icing sugar (confectioners for you Americans!)
1/2 tsp. salt
1-2 tsp. clear vanilla (or your favourite flavour)
6-8 oz. whipping cream

Cream shortening until fluffy. Add sugar and continue creaming until well-blended. Add salt, flavouring and whipping cream; blend on low speed until moistened. Beat at high speed until icing is fluffy.

Extra Special Buttercream Icing needs to be refrigerated, both after it is made and when it is placed on the cake. It will keep 3-5 days in fridge.

***You may substitute 1 cup of butter plus 1 cup of shortening instead of using all shortening. Tastes better!!! (that's how I make mine) The only way I would do all shortening is if I was doing a really white cake. Also, in that case I would make sure I had clear vanilla.

This is really good

Fettucine Alfredo Sauce



3/4 cup Butter (Melt in sauce pan)
Add: 1 Cup milk or heavy cream
1/2 cup sour cream
1/2 cup Parmesan cheese
2 TBSP Cream Cheese

Seasonings: salt, pepper, garlic powder (or fresh), pinch of parsley

Toss any kind of pasta with it or even use this for chicken garlic pizza. Yum!

Best Sugar cookie recipe ever


Sugar Cookie Recipe



1/2 cup butter, 1 egg, 1 1/2 cups flour, pinch of salt, 1/2 cup sugar, 2 Tbsp milk, 1Tsp baking powder, 1tsp vanilla. Cream together, cut in shapes and bake at 350 for 8 minutes.
HERE IS A GOOD TIP: I made these the other day and I didn't have any milk so I used 2 Tbsp of sour cream instead. They were fantastic. Also when you make your icing, add a tsp or two of almond extract to the icing. Yummm.


This recipe is unlike any other sugar cookie one I have ever made. It was amazing. Darren thought it was so good he ate almost all our valentine cookies on one shot and asked me to make more.

Spinach Lasagna

Here is the recipe for the Lasagna. It seemed like a lot of work the first time I made it but it really doesn't take that long. Just a note about the spinach: If you use frozen spinach then make sure it is completely thawed out, place it in a dish towel and wring all of the water out. Otherwise the lasagna will be too wet.

1/4 c. butter

2 garlic cloves (or seasoning)

1/2 c. flour

1 tsp salt

2 c milk

2 c. chicken broth

2 c. mozzarella cheese

1/2 c. parmesan cheese

1 chopped onion

1 tsp basil (if you have it)

1/2 tsp oregano (if you have it)

1/2 tsp pepper

9 lasagna noodles (partially cooked)

2 c. cottage cheese

2 c. cooked chicken cubed

2 10 oz pkg frozen spinach (I don't like using frozen because it looks slimy. If you go fresh make sure you use enough. It may seem like lots but spinach cooks down)

Saute onions, garlic and seasonings in butter. Mix in flour and then add milk and chiken broth. Stir (on med-low heat) until thick. Add parmesan and mozzarella cheeses, let melt slowly. Grease 9x13 pan. Put a little sauce in the bottom. Layer noodles, cottage cheese and sauce. Repeat two more times ending with sauce on top. Put spinach and chicken cubes on top. Bake at 350 for 45 minutes. Let set before cutting

2lb ground beef/small onion

1 pkg. taco seasoning

¼ t pepper

¼ t oregano

parsley

1 c sour cream

2c cheese

½ c salsa….use half of cheese salsa mixture on top

2 T each each tortilla

15 min 350.

20 frozen dinner rolls

1 sm pkg (cooked type) butterscoth pudding mix

(I can only find lg pkgs, so i just divide in half)

1/2 c marg

1/2 c brown sugar

1 tsp cinnamon

Spray 1 bundt pan with pam. Put frozen rolls into pan and sprinkle pudding mix over rolls.

Combine melted marg, brown sugar & cinnamon.

Pour over rolls.

Cover pan with towel, leave in warm place and let rise 8 hours or overnight.

Bake 350 deg for 30 min.

If you don't have a bundt pan, try using a 9X12. if you use a smaller pan, make sure it is deep. If using a 9X12, use 24 rolls. (I found that 24 rolls in the bundt pan makes the sauce overflow in your oven!)

Crockpot Stroganoff

Stewing Beef Cubes
2 cans cream of mushroom soup
2 packets of onion soup mix
Sour cream (maybe 1 cup ish)

Place the beef cubes in the crockpot. Pour the mushroom soup and onion soup mix over the meat. Cook on low for 4 to 5 hours or on high for 2 1/2 to 3 1/2 hours. Once the meat is cooked and just before serving, stir in the sour cream, to your taste. Serve over cooked egg noodles.

Sometimes I use Cr Mush soup, french onion soup(can), consomme and dry onion soup mix....so good!!!

Keilbasa and Potatoes

KIELBASA AND POTATOES

1 U-shaped link of kielbasa sausage
Red Potatoes washed and quartered
Applesauce
Onions, thinly sliced

Place the potatoes in the bottom of the crockpot. Then slice the kielbasa in 1-2 inch slices and throw on top of the potatoes. Pour the applesauce and onions over the potatoes and sausage and cook on low for 6 to 8 hours OR on high for 3 to 4 hours. Serve with your favourite mustard!!! ***This can also be a freezer meal....Slice the sausage and place in a large ziploc bag with the applesauce and onions and FREEZE! When ready to use...just leave it in the fridge overnight the night before to thaw. To cook....just put potatoes in the crockpot, pour the sausage mixture on top and cook...so easy!!

Caramel Shortbread Squares

(my Christmas MUST!)
1 1/4 cup flour
2/3 cup butter
1/2 cup butter
1/2 cup brown sugar
1/2 cup sweetened condensed milk
1/4 cup sugar (white)
2 TBSP. corn syrup (light)
1 1/4 cup semi sweet chocolate chips

Preheat oven to 350F. In a medium mixing bowl, mix 2/3 cup butter, white sugar and flour till crumbly. Press into a 9 inch square pan and bake 20 min. Meanwhile in a 2 QT saucepan, combine 1/2 cup butter, brown sugar, corn syrup and sweetened condensed milk. Bring to a boil over med. heat. Continute boiling for 5 min stirring frequently. Remove from heat and beat vigorously w/ wooden spoon. Pour over baked crust. ...crust can be warm or cool. Cool until it begins to firm. Melt the chocolate and pour over caramel layer...cover the layer completely. Chill. Cut into 48 squares because it is rich!!!! I like to store them in the fridge too.

2 1/4 cups brown sugar
1/2 cup butter
1 can sweetened condensed milk
1 cup corn syrup
1 tsp. vanilla
dash salt

Stir everything but vanilla and salt to soft ball stage. Add vanilla and salt. Pour over popcorn.(Use 3 gallons of popped popcorn)

One Yellow cake mix (any kind)

Cook as directed in 9x13 pan.

Immediately upon removal from oven, pour a large can of crushed pineapple (juice also) evenly over cake.Cool…then prepare a large box of instant vanilla pudding and spread over cake.Spread Cool Whip over the pudding layer.Refrigerate.May sprinkle toasted coconut, roasted almond slices, maraschino cherries or anything. Else appropriate on top!!

One chocolate cake mix (any kind)

Cook as directed in 9x13 pan.
Immediately upon removal from oven poke holes all over the cake with round wooden spoon handle (about an inch apart). Quickly drizzle ½ a can of sweetened condensed milk and ½ a can of caramel ice cream topping over the top of cake.Cool..then spread Cool Whip over cake.Crush a skor bar and sprinkle over cake.Refrigerate….

Microwave Fudge

2 c Miniature marshmallows
14 oz Can condensed milk
1 ds Salt
12 oz Semi-sweet chocolate chips
1 c Milk chocolate chips
1/2 c Nuts
1 1/2 ts Vanilla

In 2 qt. glass measure, combine marshmallows, milk, and salt. Microcook on HIGH 3-4 minutes. Stir until marshmallows melt and mixture is smooth. Add chips and stir until melted. Stir in nuts (may use up to 1 cup) and vanilla. Line 8 or 9 inch square pan with wax paper. Spread fudge evenly in pan. Chill 2 hours, until firm. Turn on to cutting board, peel off paper and cut into squares. **I don't use nuts***Serves 32

Bran Refrigerator Muffins

BRAN REFRIGERATOR MUFFINS

2 cups boilng water
6 cups bran
4 cups buttermilk
1 cup oil
3 cups sugar
5 egg whites
4 cups flour
1 cup whole wheat flour
5 tsp. baking soda

1) In large bowl pour water over bran.2) Add buttermilk and let stand 5 minutes3) Stir in oil and sugar.4) Beat in egg whites 1 at a time until blended.5) Sift flours and baking soda.6) Stir into batter just enough to moisten..DO NOT OVER STIR!!!!7) Store in the fridge in a covered container for up to 4 weeks.Bake @ 375F for 15 to 20 min.***These are awesome to have handy....with the batter pre-prepared, it is nice to wake up in the morning and stick a batch in the oven...yummy hot muffins every morning!!!

Cherry Loaf

Cherry Loaf

1/4 c. butter
3/4 c. sugar
1 egg
CREAM TOGETHER
Add 1/4 tsp. almond extract and
1-10 oz jar maraschino cherries, cut in half or quarters.

Pour cherry juice in measuring cup and add enough milk to make 1 cup of liquid.Add 2 1/2 tsp.baking powder to 2 cups of flour. Alternate adding flour mixture and milk mixture to the egg mixture.Pour into a greased bread tin.BAKE for 1 hour @ 300F.HINT- I add a litle red food coloring to the batter to make the loaf a pink color!

Garlic Pizza Crust

Garlic Pizza Crust
2 Tbsp. yeast
2 c tepid water (90*)
2 Tbsp. sugar
1/2 c oil
1 tsp. salt
5 1/2 - 6 cups flour
3 cloves crushed garlic
Dissolve yeast in water and add sugar. Wait a few minutes then add oil and salt and garlic. Mix in 3 cups flour and mix about 10 min till it leaves the side of the mixer bowl. Add remaining flour with dough hook or by hand. Knead until smooth. Section and place in freezer bags (if desired).

To BAKE OPTION #1: Remove from freezer and place dough into greased bowl. Cover with towel and allow to thaw and rise for 3 - 6 hours. Allow to rise twice in the bowl. Punch down. Oil baking sheets using fingers press out to edges. Makes 2 pizzas, cookie sheet size. Let rise a bit and top. Bake at 425* for 20 min. This makes 2 cookie sheet sized or 12 after school snack size.

This is great for freezing.

BLACK FOREST CHEESECAKE BROWNIEs


FUDGY BROWNIES
1 1/3 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup butter/margarine, melted
1 cup cocoa
2 cups white sugar
4 eggs
1 1/2 tsp vanilla

~Mix together the flour, baking powder and salt. Add the melted butter and stir in the cocoa. Blend in the sugar, eggs and vanilla.
Pour batter into greased 13 x 9 x 2 pan and bake at 350F for 30 mins (although you should keep an eye on them close to the end, because they easily burn and oven temperatures and times for heating vary). Cool and put topping on.

Now the TOPPING: (So fattening I'm sure, but to die for)
1 brick of cream cheese
1 tub of cool whip
icing sugar to taste
can of cherry pie filling

(just put the 1st 2 ingredients in a bowl and mix them and add icing sugar until you like the taste of it)
~Spread on top of cooled off brownies. Then pour a can of cherry pie filling on top and spread around.

Bruchetta Chicken

Bruschetta Chicken Bake

This recipe is quickly becoming one of my Favorites. It is SOO easy! (The picture is from a Kraft Canada Magazine)



1 Can Aylmer Accents Italian Stewed
2 cloves of garlic, minced
1 pkg Stove Top stuffing mix for Chicken
1 1/2 LB chicken breast(cut up into strips or left whole)
1 tsp basil
1 cup Mozzarella cheese

Preheat oven to 400F. Place tomatoes in a medium bowl Add the garlic and stuffing mix to the tomatoes, mix and set aside.

Place chicken in a 13x9 inch baking dish; sprinkle with basil and cheese. Top with the stuffing mixture.

Bake 30-60 minutes OR until the chicken is 180.C.

Lisa and I thought it would be fun to have a blog to post recipes. We spend so much of our time providing meals and snacks for our families that it is always great to get new ideas. We are thinking that anyone can just post whatever kind of recipe they want and if someone wants a theme they can post what the theme is and we can add that type of recipe if we have one.
